1. The Claw Grip
The foundation of all good knife skills is learning the proper way to hold a knife. The “claw grip” gives you maximum control and stability. Grip the handle of the knife firmly with your dominant hand, wrapping your fingers around with your thumb pressed against the side of the blade. Curl your other fingers under, using your knuckle joints as a guide. Your pointer finger should be extended down the spine of the blade. This “claw grip” locks the knife in place.
2. Curve Your Fingers
When slicing, curl the fingers of your guiding hand under to safely guide the knife and protect your fingertips. Keep your knuckles pressed against the blade facing your target ingredient. Curve your fingers into a C-shape facing down to guard against potential slips.
3. Use a Sharp Knife
A dull knife is an accident waiting to happen. It requires more force, slips easier, and can tear rather than slice ingredients cleanly. Invest in a good quality chef’s knife and keep it sharp with regular honing. It will make cutting easier and safer.
4. Straighten Your Ingredients
For even, straight cuts, straighten ingredients first. For round veggies like onions, cut a small sliver off the bottom to create a flat, stable surface. For longer ingredients, trim the ends. A stable base prevents wobbling for cleaner cuts.
5. Slice with the Tip
Use the front third of the blade when making precise slices. Let the knife do the work rather than forcing it. Draw the knife tip to heel in one fluid motion without sawing back and forth. Apply gentle pressure and keep the tip grounded as you slice.
6. Rock and Chop
For fast, even chopping, use a rocking method. Curve fingers under with knuckles angled down and anchored. Raise the tip slightly and curve the blade in a rocking motion, using the front half of the knife. Let the blade do the work!
7. Mind Your Knuckle Clearance
When chopping, leave knuckles anchored but keep middle finger curled in to maximize clearance. Avoid “dragging” knuckles too close to the blade. Leave space so knuckles clear the board as you chop.
8. Use Your Board
Let your cutting board work for you! Gripping ingredients with your guiding hand’s fingertips, use the board to clamp items for stability. Tuck fingertips under for safety. Angle the knife and use swift up-and-down chops for speed.
9. Stack Your Cuts
For quick, uniform diced pieces, slice trimmed ingredients into sticks first. Gather the sticks together, aligning ends. Then make perpendicular slices to dice. This stacks your cuts for fast, even results.
10. Control the Tip
When mincing herbs or garlic, grip knuckle joints on the blade to anchor it. Keep the tip pinned to the board as you rock the knife back and forth, using the front third of the blade. Control the tip for fine, even mincing.
